 Main Course - Grilled Beef Wrapped with Fragrant Leaves

Ingredients of Grilled Beef Wrapped with Fragrant Leaves
400g     minced beef
100g     beef fat
50 pcs   La lot leaves
1 tsp     minced garlic (chopped)
1 tsp     lemon grass (Finely chopped)
1 tsp     fried shallot
20ml     cooking oil
15ml     oyster sauce
5g         five spice
Salt and pepper to taste

Preparation Grilled Beef Wrapped with Fragrant Leaves
Mix all ingredients together except cooking oil and La Lot leaves. Wash and drain Lot leaves and dry with kitchen cloth and cut off the stem with kitchen scissors. Place the dark green side of the leaf facing down onto the working surface. Arrange approximately 10g of mixture onto the lot leaf (Note : cook one piece to check seasoning before rolling up the filling). Fold in right edge, then left. Tightly roll the filling in the Lot leaf to form a psing roll shape. Use a bamboo skewer to secure the parcel. Place 2 to 3 pieces on each skewer. Pan-fry each side for one minute until cooked. (note: charcoal-grilling them will produce a better flavour). Garnish with chilli flower, roasted peanut and fried shallot
